DESCRIPTION:Speakers: Sowjanya Sree Kandregula (School of Biotechnology\, 
 Banaras Hindu University)\nDuckweeds (Water lentils) are progressing towar
 ds their incorporation into the Planetary Health Diet. Several studies hav
 e focused on analyzing the quality and quantity of the wide spectrum of nu
 tritional components in these tiny flowering plants. Based on these invest
 igations\, duckweeds exhibit excellent nutritional profile suitable for hu
 man nutrition. However\, the bioavailability of these nutrients is depende
 nt on several factors\, one of them being the content of antinutritive com
 pounds like Phytate and Oxalate.\nPhytate\, inositol hexakisphosphate\, is
  the main storage form of Phosphorus in plants. When consumed by humans\, 
 they can lower the absorption of some of the minerals like Zinc\, Magnesiu
 m\, Calcium and so on\, because of their strong affinity towards these min
 eral ions. Oxalates play diverse roles in plants\, such as in calcium home
 ostasis\, detoxification of heavy metals\, pH regulation and so on. They c
 an be found in plants as soluble or insoluble salts. When consumed by huma
 ns through plant-rich diet\, they can interfere with the bioavailability o
 f minerals and may also show potential nephrotoxicity. \nAlthough consumed
  in sufficient amounts\, the extent of bioavailability of the minerals is 
 key to assessing mineral malnutrition. Here\, the role of antinutritive co
 mpounds can be crucial. Our current understanding and the quantities of ox
 alate\, phytate and the minerals in different duckweed species will be dis
